Cara’s Blackberry Cobbler Recipe

Cara Graham the co-owner of contest partner Lockeland Table offers her simple and delicious cobbler recipe for everyone to enjoy this berry season. Thanks Cara!

 

Filling:

5 cups fresh picked blackberries, washed

1 tbsp lemon juice

1/3 cup sugar

1 tbsp Weisenberger all-purpose flour

1 lemon-zested pinch of salt

 

Topping:

1 1/4 cups Weisenberger all-purpose

1/3 cup sugar

2 tsp baking powder

1/2 tsp ground cinnamon 

1/4 tsp salt 

1 egg

1/2 cup buttermilk 

3/4 stick unsalted butter, melted & cooled

1/2 tsp vanilla extract 

 

Directions:

  • preheat over to 375*
  • grease a 2-quart baking dish
  • to make the filling, gently hand-toss berries with sugar, flour, lemon juice and zest in a mixing bowl
  • add salt to bowl
  • pour into greased baking dish
  • to make the topping, stir together flour, sugar, baking powder, cinnamon and salt
  • In a separate bowl, whisk together egg, buttermilk, butter and vanilla until well blended
  • pour egg mixture and using a rubber spatula gently fold until flour is moistened and the mixture forms a soft dough
  • drop large spoonfuls of dough into the fruit, spacing evenly (the dough will not completely cover the fruit)
  • bake for 45 minutes or until filling is bubbling and topping is golden brown
